Your Lebanese Sweet Potato kit will include:

At times it can be difficult to come up with ways of mixing healthy foods together into one full meal. But today, we’ve got you covered! With wanderlust on our minds, we wanted to provide the joy of indulging in an easy to make and filling vegan meal which doesn’t compromise one bit on flavour. These Lebanese Sweet Potato Boats are quite easy to put together and are absolutely delicious.
 
Sweet potatoes are high in fibre and rich in antioxidants. They are amazing for gut and heart health. We love them! For a little taste of the middle east: tabbouleh (yuuum!). Many know how delicious tabbouleh is, but not everyone knows how nutritionally packed this salad is. Parsley is one of the (if not the!) healthiest greens out there, packed with vitamins and minerals necessary to support bone and heart health as well as antioxidant and antibacterial properties. Fibre rich tomatoes are also known for their heart health properties, they are packed with potassium, Vitamin C and folate. Onion doesn’t just add flavour to any food but is also packed with nutrients and cancer-fighting compounds. We pre-season and pre bake our chickpeas to make this meal even easier to put together.

Lebanese Sweet Potato Boats Recipe
- Serves 2 to 3 people -
 
1. Preheat oven to 400 degrees F and line a large baking sheet with foil.
 
2. Rinse the sweet potatoes and cut them in half length wise. Rub 1/2 tsp of olive oil on the inside of each sweet potato. Place the sweet potatoes face down on the baking sheet. Bake them for 25 minutes, or until you see they are starting to caramelize at the bottom. See photo below. 
 
 
3. Prepare the tabouli by chopping 1/2 cup of parsley, cutting 1/4 cup of grape tomatoes in half, and dicing 1/8 cup onions. Add 1 tbsp of olive oil, 1 tbsp of lemon, and 1/2 tsp of salt. Toss ingredients in a large bowl until mixed thoroughly. 
 
4. Approximately 5 minutes before your sweet potatoes are ready, reheat your chickpeas by placing them in the oven for about 5 minutes (preferably using a baking sheet separate to the one with sweet potatoes), or on the stove for approximately 5 to 7 minutes. You are aiming for the chickpeas to be warm, but not overcooked or burnt.
 
5. Once the sweet potatoes are cooked, flip your sweet potatoes. Use a fork to mash down on the flesh of the sweet potato, creating a boat-like shape for your potatoes. 
 
6. Add warm chickpeas, lemon tahini sauce and parsley on top. 
 
7. Enjoy!
